Tom’s green tomato relish

Oppskrift på engelsk fra Lois.

14 large green tomatos (or 30 small)
6 red peppers
6 green peppers
8 onions (medium to large)

Chop in a food processor on medium speed so it is not too fine. Heat together

4 cups of vinegar
2 tablespoons of salt
4 1/2 cups sugar (or equivalent, these days I always use unrefined sugar)

Add the chopped veggies. Cook on medium heat ’til it loses the “fresh green” color. Pack in jars (pints). Process 45 minutes in a water bath.
